The Law on edible oils, olive classifies them into four categories:
Extra virgin olive oil
Obtained solely by mechanical pressing of olives by mechanical washing, sedimentation and filtration. Must have an acidity level of less than 0.8% of oleic acid. The taste has to be perfect and the taste overall score must be greater or equal to 6.5%.
Virgin olive oil
Obtained as oil, varies for a higher rate of oleic acid but, however, no more than 2%. The grading must be equal to or greater than 5.5%.
Olive
From a blend of refined olive oil and virgin olive oils with different lampante. The rate of oleic acid can not exceed 1.5%.
Olive pomace
From a mixture of oil and refined olive-pomace oil and virgin olive oil from several glaring. The acidity must not exceed 1.5%.
